BXT WINES

BXT was created through the desire to explore Californian viticulture through the lens of traditionally made sparkling wine. Tom Sherwood, originally from Australia, has laid down family and winemaking roots in California over the past decade, and in short order, has produced some truly impressive wines. We're thrilled to bring them to New York for the first time.

Tom works with a number of parcels around northern California, with the majority of his plots farmed by his own hands, and located in and around Sonoma County. Most of his cuvées are single parcel wines, with the exception being his “California Immersion,” which is a house cuvée comprised of grapes from a handful of sites from passionate growers in the area. The entire project stems from the same mentality as the growler Champagne producers Tom admires and was originally inspired by.

Grapes are hand picked, gently whole cluster pressed, and fermented in new and used french oak. The wine ages for 6-9 months in barrel prior to being bottled with yeast and sugar. Secondary fermentation takes place in bottle and the wine is then left undisturbed until ready. Bottles are then hand riddled and disgorged on release.

The result are truly small batch, traditionally made sparkling wines that convey the true essence of California terroir.
