DOMAINE DIDON

Chassey-le-Camp, Burgundy

Naïma and David Didon grow grapes and make wine together in Chassey‑le‑Camp, a hamlet at the northern edge of the Côte Chalonnaise. Partners in life and work, they focus on small parcels and simple principles: healthy soil, clear site expression, and wines that feel truly alive.

Curious and committed, David first studied biodynamics in the 1990s, and then spent years on organic farms in Alsace and at Michel Goujot’s pioneering domain in Lorraine, his first real experience with vineyard work. That led him to the Lycée Viticole in Beaune, where he met Naïma, and later to Domaine de Montille, where he helped lead the estate’s conversion to organic and biodynamic practices. Longstanding friendships with growers like Dominique Derain, Julien Altaber and Patrick Meyer deepened his interest in low‑intervention winemaking and encouraged him to strike out on his own.

In 2017 they came across Les Vignes Blanches, a contiguous 2‑hectare slope above Chassey‑le‑Camp planted to massale selections of Pinot Noir, Chardonnay, Aligoté and Pinot Blanc. The vines here are between 55-75 years old. The site - clay over limestone, steep and southeast‑facing - yields wines with clarity and tension. It’s a truly stunning vineyard, and certainly the standout in the village.

Farming is hands‑on: horse‑plowing where possible, manual work elsewhere, soils tilled and vines pruned for balance rather than maximum yield. They use biodynamic preparations, applied thoughtfully, as part of a broader approach that treats the vineyard as a living system. In the cellar they keep interventions minimal: slow pressing, closely-monitored indigenous ferments, neutral oak, steel and fiberglass as appropriate. Estate wines are made entirely without sulfur additions; négoce cuvées carry only very low amounts of SO2.

The domaine has now grown to 5ha, about half of which is planted to Aligoté. There are also significant holdings of Chardonnay, as well as a smidge of Pinot Blanc and Pinot Noir across multiple sites. They also produce some négoce wines, sourcing from their neighbors, as well as some Pinot Noir from Alsace and Gamay from Juliénas in Beaujolais.

All of the purchased grapes reflect the same principles as the domaine’s own vines: precision in the vineyard, restraint in the cellar, resulting in wines that communicate a sense of vibrancy and life. The wines of Domaine Didon are carefully crafted, yet always joyful. Their work is quietly ambitious, with the goal to let each site speak as clearly and honestly as possible through the glass.
